We are Nolan and Malinda Ellingson, we moved to New Salem at the end of August in 2019 from Grand Forks, ND.

Nolan is a Certified Paramedic for Metro Area Ambulance, a Flight Medic for Bismarck Air Medical, a Combat Medic in the North Dakota National Guard, and a Volunteer Paramedic for New Salem Area Ambulance.

I (Malinda) have an Associates in Culinary Arts from North Dakota State College of Science, I am a ServSafe Certified Professional, a Certified Food Manager, a Certified Food Handler, a Certified Dietary Manager, a Certified Food Protection Professional, and I have a total of 16 years of foodservice experience.

With our combined love of taking care of and feeding people we knew we wanted to somehow mix our passions and bring something to a community that welcomed us from the very beginning.

This past September we took our annual anniversary trip. We talked about so many things while traveling the open road including our dreams, our goals, our family, and our future. It was on this trip that we decided to take a leap of faith and start looking into options for our business. When we returned home the opportunity was presented to us to bring Udderly Caffeinated to life. It felt like our prayers had been answered and things just fell into place. From the very beginning of our journey we knew we wanted to pay tribute to Salem Sue and have a fun unique place for everyone to visit.

As we were tossing around names from cow this to cow that I looked at Nolan and said it’s “Udderly Caffeinated”, at that moment we both knew we had just named our first business and so the rest of our lives had just begun.

We have spent countless hours in building our business from the ground up together and now the time has come. We want to thank our parents, the Grade family, our family, friends, and community for the outpouring amount of support we have received. We are truly blessed.
